

Wallace L. Rande, Ed.D., CHA, is an associate professor at the School of Hotel and Restaurant Management at Northern Arizona University. He earned his Ed. D. in educational leadership at NAU., the MBA. from the University of Rhode Island, his BA from Michigan State University in hotel, restaurant, and institutional management, and his AOS degree in culinary arts from Johnson and Wales University. He has held several chef and kitchen management positions, as well as teaching at Johnson and Wales University's Culinary Arts Division before accepting his position at NAU. His research and teaching interests are in the area of food and beverage management with emphasis on kitchen operations, beverage management, wine & beer.
Rande has a special interest in wine education and organizes wine-tastings and dinners that are open to the public by reservation.
