

Donald E. Carlson is the executive chef of the School of Hotel and Restaurant Management and supervises the student training facility at the Inn @ NAU, a full service restaurant on the campus of Northern Arizona University. Chef Carlson is a graduate of the Culinary Institute of America in New York (class of 73), and has served on the faculty at Johnson and Wales University in Providence, Rhode Island and Newbury College of Culinary Arts in Brookline, Massachusetts. In his thirty plus years of teaching the culinary profession he has also been recognized as an outstanding educator and holds several team competition awards in culinary competitions.
